That book sounds very useful for pitching PR to magazines, I'm going to look into it myself! (EDIT: Looks like its available online: http://www.awmonline.com.au/)
Corrine, contributors are normally paid per word, with an agreed length of the article in advanced (ie: 400 words, 800 words). I've found success through approaching a publication with an existing story, and I've also been a freelance contributor, being given stories to write - so don't be afraid to try either option to get your foot in the door!
As far as 'landing a job' goes, the freelance route seems the most well worn. Develop a reputation for returning high quality copy on time for one or multiple publications, and you'll be in a good position to move into an on-staff position. Freelancing is a pretty fast moving treadmill if you want to support yourself full time on it, so I wish you luck!
