Bit of an impossible question really.I like Establishment, but that's based on what I look for in a club.
What do you look for?

Check out the home of MaraJoara - TonicLounge!!! Say hi to Katie and Ken!!!
DJ James Bucknell *NYC and guests play underground sounds to make your body talk. Listen for disco, 80s house, electro and more with guests from near and far. The upstairs parlour plays host to art extravaganza and late night salons for dilettantes and the people who love them.
check out Brut33, a Sydney DJ who sweats soul and drinks disco juice, laying on a bed of electrofunk with a diva on each arm. He coowns the independent record label After Thought Records and is a Radio DJ on Alchemy on SBS. He's happiest seeing people getting down and going crazy.
Saturday nights is the home of dance floor soul and rare grooves in Sydney for over 21/2 years now. With host Gian Arpino and guest collectors/selectors every week...Mention this e-mail for Free Entry & $2 VODKAS 8-9pm Friday & Sunday
Tonic is a wicked bar for an early Sunday morning insane style photo shoot!
My favourite Manly bar on a Sunday night is the Barking Frog! They play live aboard www.departreality.com every three months ! Its totally insane and well worth it! see you there!!!
In Situ Bar manly for delicious french martinis!!!

One of my favourite clubs right now is one a friend of mine runs out of The Marquee on Parramatta Road on a monthly basis. It's called Bloodlust and caters to the more industrial/dance/psy sort of crowd with a twist of punk, rock, metal and even swing music!
The venue is great (non-smoking and smoking areas inside, so everyone is happy) with fair bar prices, decent facilities, on site parking, good security and is also easily accessed via bus or taxi for those of us that like to hit the bar.
Its not a place a lot of people would think to go, but lots of people that I have suggested it to have gone and loved it.

Hugos at Kings Cross Friday & Sunday nights...
But I also like (im about to sound my age) Dragonfly at the cross also. Just depends what event is running, very selective & hard to get into... most of the time. sometimes you just wonder what they were thinking.
But also The loft, The Argyle isnt that bad either and Id say Establishment also.

Zeta Bar for apple martinis, Cherrijam for a boutique clubbing experience, Tank to work those legs on the stairs, Favela for dinner then dancing & Ruby Rabbit just because it's Ruby Rabbit! :) I'm not sure if the fly is actually selective. I find it exceeding its capacity sometimes. I need a seat to sit&chat! Blu Horizon is gorgeouss! Establishment on a Thursday night after work is quite accomodating!

Zeta Bar is beautiful - real chilled out, very classy - the Loft and Cargo and Rucy Rabbit are good :)
